Paneer Bhurji Bread/Spiced Cottage Cheese Bread






            Summer break equals hungry kids .Junior and Princess Pea are busy with many activities keeping mom busy too . There is always a special request ,"Mom, make us something different , special to eat and don't forget yummy too "...Junior being a teenager is always hungry . He asked for paneer when Princess Pea asked for  bread...mama wanted one dish meal...so here it is...

             Recently Mr AJ gifted me " Cuisinart automatic bread maker ". I enjoy making fresh breads . I made the dough in the bread machine and follwed the bread recipe given in the Cuisinart recipe booklet .

Bread :-

Water (room temperature ) :- 1 1/8 cups
Unsalted Butter (room temperature , cut into 1/2 inch pieces ) :- 2 Tbsp +1 tsp
honey :-2 1/4 Tbsp
Salt :- 1 1/8 tsp

Nonfat dry milk :- 3 Tbsp

Paneer Bhurji :-

Paneer ( freshly made ) :- 3 cups
Onion :- 1 medium finely chopped
Tomato :- 1 big finely chopped
Green chillies :- 3-4 finelly chopped
Ginger paste :- 1 1/2 tsp
Garlic paste :- 3/4 tsp
Garam masala :- 1 tsp
Cilantro leaves :- handful, finely chopped


Tempering :-

Oil :- 2 tsp
Mustard Seeds :- 1/2 tsp
Cumin Seeds :- 1/2 tsp
Fennel seeds :- 1/2 tsp
Hing (Asafoetida ) :- a pinch
Turmeric powder :- 1 tsp
Salt :- 1 tsp (to taste )

              In a frying pan heat oil and add the tempering ingredients one by one . Once the seeds crackle , add onions and fry till translucent . Add ginger - garlic paste and fry till the raw smell is no longer there . The green chillies will follow soon . Add the tomatoes and cook till the oil starts oozing from the sides . We want the Bhurji to be moist but not wet . Add salt to taste .Cook till you no longer smell raw milk . Add cilantro leaves and mix well .Keep aside to cool down .


Assembly :-

                 Preheat the oven to 170 degrees and turn it off . Grease the medium sized cookie sheet . Dust the working suraface with little flour and roll the bread dough in about 13x9 rectangle . Spread the paneer bhurji evenly on the rectangle .Roll it tightly making sure less air is trapped in it . Put it seam side down on the cookie sheet .Let it sit in the warm oven for 30 minutes .Take out and make diagonal slits on top of the bread with serrated knief . Preheat the oven to 450 degrees and once it is reached ,reduce it to 400 degrees . Brush the top with little olive oil . Bake for 40 mins .Cool it for 10 minbutes and the bread is ready to be cut .

                   Enjoy the warm bread . This can be served with curry and raita too .
